In a recipe collection of Danish pastry, a recipe for hindbær snitter (Danish raspberry bars) for sure needs to be included. Hindbær snitter are extremely popular in Denmark. The raspberry bars taste very fruity, are super delicious, and don’t take too much time to make! They are a little bit different from the other Danish cakes in my collection, as they do not contain any marzipan. I found the recipe at <a href="http://amalielovesdenmark.blogspot.de/2012/02/sue-himbeer-schnitten-wie-aus-danemark.html" target="_blank">AmalieLovesDenmark</a>.<br />
Here’s what you’ll need to bake them:

Ingredients (makes one baking sheet)</h3>
<b>Dough:</b><br />
- 300 g (1 3/4 cups + 2 tbsp.) flour<br />
- 75 g (1/2 cup + 1 tbsp. + 1 tsp.) almond flour<br />
- 2 pinch of baking powder<br />
- 250 g (1 cup + 1 tbsp. + 2 tsp.) soft butter<br />
- 3 egg yolks<br />
- 100 g (3/4 cup + 1 tbsp. + 1 tsp.) powdered sugar<br />
<br />
<b>Filling:</b><br />
- 200 g (2/3 to 3/4 cup) raspberry jam<br />
<br />
<b>Glaze:</b><br />
- 250 g (2 cups + 2 tsp.) powdered sugar<br />
- 1 tbsp. lemon juice + 3 tbsp. raspberry syrup (or 2 to 3 tbsp. water)<br />
- Colored sprinkles (nonpareils) <br />

Directions</h3>
<br />
<b>Dough and filling</b><br />
- Knead together flour, almond flour, baking powder, and butter.<br />
- Add powdered sugar and egg yolks and knead all ingredients to a dough.<br />
- Wrap the dough in plastic wrap and put it in the refrigerator for about 2 hours.<br />
- Divide the dough into two parts. Roll out each part on a piece of parchment paper until it is a rectangle (of about 27 x 32 cm / 10.5 x 12.5 in.). I usually don't use a rolling pin, but use my hands to "roll out" the dough (it might be helpful to occasionally wet your fingers with a bit of water so that the dough doesn’t stick to them).<br />
- Spread raspberry jam over one part of the dough.<br />

- Place the other part of the dough on top. Carefully peel the parchment paper off the upper layer. If this causes damage to the upper layer, fill the hole with a piece of dough taken from the edge of the cake.<br />
- Prick some holes in the dough with a fork before baking.<br />
- Bake in the oven at 180°C (350°F) for about 20 minutes. The cake should be golden brown in color.<br />

<b>Glaze </b><br />
- In a bowl, stir together powdered sugar, lemon juice and raspberry syrup (or water), until you have a glaze that’s spreadable, but not too thin. I prefer to take raspberry syrup instead of water, as it adds a nice flavor and rose color to the glaze, and causes the glaze to dry more slowly which will give you more time to spread the sprinkles (if you only take water and lemon juice, the glaze will crust more quickly).<br />
- Spread the glaze over the cake, and sprinkle some nonpareils on top.<br />

In this post, I would like to show you how you can use the <a href="http://bakingsugarfox.blogspot.com/2013/05/a-diy-drawing-projector-for-decorating.html" target="_blank">do-it yourself drawing projector</a> for decorating cookies. Although I haven't worked with a Kopykake projector yet, I think the handling is similar (at least when it comes to tracing the projected image with a piping bag; see for example <a href="http://www.simplysweetsbyhoneybee.com/2012/03/writing-on-cookie-using-kopykake.html" target="_blank">SimplySweetsByHoneybee</a>). But, with the DIY drawing projector, you cannot flexibly adjust the size of the projected image. The image on the transparency film must be the right size for your cookie.<br />

<b>To use the DIY drawing projector you'll need: </b></h3>
- transparency film<br />
- a pen for writing on transparency film<br />
- tape<br />
- scissors (to cut the transparency film into small pieces)<br />

<b>The principle of the drawing projector is the following: </b></h3>
First, you need to transfer your image of choice in the right size (see “Step 1”) onto a piece of transparency film. Next, place this piece of transparency film on the CD jewel case, and switch on the flashlight. The image will be projected onto your cookie. You can now trace it with an edible food marker or a piping bag (filled with icing).<br />

<b>Step 1: Choosing the right size of the image on transparency film. </b></h3>
How do we know which size to choose for the image? To find out the right size, we need to build a tool (once we have built it, we can use it for every cookie we are going to decorate):<br />
Take a piece of transparency film and draw lines of different length on it (see left picture). I started with a line of 1 cm / 0.4 in., and finished with a line of 6 cm / 2.4 in. (increasing the length in 0.5 cm / 0.2 in. increments). Write down the length of each line (1 to 6 cm) on the sheet as well. Put this piece of transparency film on the CD jewel case, switch on the flashlight, and place your cookie (or cookie cutter) on the projection of the lines. Now you can see, how long the lines are on the cookie (see right picture). For the cookie on the right picture, I chose a width of 4.5 cm / 1.8 in. for the image on the transparency film.<br />

It's good to have a digital version of your image of choice on your computer (e.g., by scanning the image, or taking a picture of it). Resize the image to the “right” size (e.g., with a text processing program).<br />
There are different ways to transfer the image onto the transparency film. In this example, I printed the image (4.5 cm in width) on a piece of paper (see picture below). Afterwards, I traced the printed image onto transparency film with a pen. As your cookies may vary a bit in size, you may want to also print the image a little bit larger (5 cm / 2in.) and a little bit smaller (4 cm / 1.6 in.) than the "right" size. <br />

Alternatively, you can print the image directly onto transparency film. Make sure, that the transparency sheet you're using is compatible with your model of printer (ink-jet or laser printer). </div>
After you've decorated your cookies, you can store the piece of transparency film with the image on it for later usage.<br />

Place the piece of transparency film (with the image on it) on the CD jewel case. Fix it with some tape, to make sure it doesn't slip out of place.
Now you can switch on the flashlight. The image will be projected onto the lower surface of the projector. Place your cookie on this position. Trace the projected image with a piping bag filled with Royal Icing or with a food marker. It might take some time until you know how to hold your hand so that the shadow of your hand doesn’t always get in the way.<br />

In this post, I would like to show you how to build a simple and inexpensive drawing projector, that can be used for decorating cookies (or for other drawing projects). To make the drawing projector, you'll need a flashlight, two boxes, a CD jewel case and some other stuff (like scissors and tape). Building this projector was fairly easy, and did not take much time. <br />
<a name='more'></a>When I recently started to read more about decorating cookies, I discovered that there are several techniques and tools for transferring an image onto a cookie. One of these tools is the Kopykake projector. What a Kopykake projector is and how it works has been described in detail for example by <a href="http://sweetopia.net/2010/06/decorating-cookies-with-a-kopykake-projector/" target="_blank">Sweetopia</a> or <a href="http://www.sweetsugarbelle.com/2012/07/using-a-kopykake-projector/" target="_blank">SweetSugarbelle</a>. The principle is the following: The projector projects an image onto a cookie. You can trace the projected image with an edible color marker or a piping bag (filled with icing). Unfortunately, the Kopykake projector is rather expensive.<br />
This do-it-yourself drawing projector might be a good alternative to a Kopykake projector. The costs for this DIY project were low: I spent 10 Euro (about 13 USD) for the flashlight. I found the two boxes needed for this project at my job. Here are the how-to Instructions:<br />

<b>Flashlight </b><br />
Not every flashlight will work for this project. Choosing the right one is critical. It is important, that the flashlight evenly distributes the light (like the right one in the picture below). I used an "adjustable focus flashlight" from "Wetelux", which I found <a href="http://www1.westfalia.de/shops/technik/beleuchtung/leuchten/taschenlampen/1231593-fokussierbare_taschenlampe_aus_aluminium_mit_5_watt_cree_led.htm" target="_blank">here</a>. The price was 10 Euro (about 13 USD). What I also like about this flashlight is, that the on-button and battery compartment are located outside of box A when the flashlight sticks in the box. You can find comparable flashlights (outside of Germany) by searching the web for "zoomable flashlight" or "adjustable focus flashlight".<br />
When using a flashlight, that does not distribute the light evenly (like the ones on the left and middle pictures), the projected image can hardly be seen. But, these flashlights might be suitable as a light source, when their light shines on the sidewall of the box. Just experiment with it.<br />

<b>Box A</b><br />
Box A will hold the flashlight, and will thus determine the distance between the light and the CD jewel case. One has to keep in mind, that the projected image is a bit larger than the image on the transparency film (and drawing very small images on the transparency film might become difficult). For example, for my drawing projector 4 cm / 1.6 in. on the transparency sheet correspond to about 6.5 cm / 2.6 in. on the cookie. Therefore, box A should be rather <u>high</u> for the following reason: The higher box A is, the smaller will be the difference between the size of the image on the transparency film and the projected image. <br />
The box I used was 17.5 cm / 7 in. in width, 15 cm / 6 in. in depth, and 38.5 cm / 15 in. in height.<br />
If you can't find a proper box, you could try to build a box or a cylinder with a large piece of cardboard. <br />
<br />
<b>Box B</b><br />
Box B should be thick and stable. It will hold the CD jewel case, and will thus determine the distance between the CD jewel case and the cookie. Box B should be <u>high</u> enough to be able to comfortably work with your piping bag in the box. But it shouldn't be too high, because: the lower box B is, the smaller will be the difference between the size of the image on the transparency film and the projected image. In addition, box B should be <u>wide</u> enough, to offer enough space for your arms.<br />
The box I used was 50 cm / 20 in. in width, 19 cm / 7.5 in. in depth, and 23.5 cm / 9.25 in. in height.<br />

Step by step instructions</h3>
<b>Box A & flashlight</b><br />
- Trace the contours of the flashlight on the bottom of box A (you'll get a circle that is about the diameter of the flashlight). Cut out the circle with a box cutter or sharp knife. As the bottom of my box was very thin, I stuck some packing tape on it to stabilize it (see middle picture).<br />
- Optional: To make the projector look a little bit nicer, wrap the box up in wrapping paper or adhesive film.<br />
- Stick the flashlight in the round hole, so that the light goes in the direction of the box opening. Make sure the light beam of the flashlight is maximally wide. To prevent the flashlight from sliding into the box, wrap some thick tape (duct tape) around it (see right picture).<br />

<b>CD jewel case</b><br />
- The CD jewel case should be transparent. You only need one part of the CD jewel case. If the front and back are transparent, you can freely choose between both. <br />
- Clean the CD jewel case before using it, to make sure there are no stains on it.<br />
<br />
<b>Box B</b><br />
- Trace the contours of the CD jewel case on the top of box B. Draw another rectangle in the contours of the CD jewel case that is a little bit smaller. Cut out the smaller rectangle with a box cutter or sharp knife.<br />
- Cut off the upper flap of the box (otherwise you might not be able to see your cookie while decorating). <br />
- Optional: To make the projector look a little bit nicer, wrap the box up in wrapping paper or adhesive film.<br />
- Place the CD jewel case onto the rectangle hole, and stick it with tape.<br />
- I stuck some adhesive film next to the left and right side of the CD jewel case to attach box A to box B with double-sided tape, and to be able to renew the tape from time to time (see right picture). Stick the double-sided tape to the left and right side of the CD jewel case (see right picture). <br />
- I added some white adhesive film on the bottom of the box (see right picture). The cookie will be placed on this surface. With the adhesive film on it, you can clean the surface easily. Alternatively, you could also place the cookie on a plate.<br />

Using this projector is in principle very similar to using the Kopykake projector. One key difference is, that you can't adjust the size of the projected image with this drawing projector once it is on the transparency film. The image on the transparency film needs to have the right size for your cookie.<br />
The DIY projector might be less flexible than a Kopykake projector, but so far worked really fine for my needs. I think, it also has some advantages compared to a Kopykake projector: the home-made drawing projector is much cheaper, can be stored more easily (you can put box A into box B), doesn't produce any noise, and is light in weight, so that it can be carried around easily. </div>

Banankage is my favorite Danish pastry. Since I was a child, I used to eat banankage when I was in Denmark. The cakes look and taste like banana. For some time past, I have been thinking of baking these cakes myself.<br />

During my last holidays in Denmark, I took some pictures of different banana cakes to capture what they look like from the outside and inside. As you can notice, all cakes look somewhat different (see pictures above). So, it seems like there is not THE one recipe for banankage. As I especially liked the banankage on the leftmost picture (with a layer of red jam), I tried to recreate this cake.<br />
Please note: Amounts like "5/6 cup" might be a bit unusual, but are the most accurate conversions of the amounts given in the recipe. On the page "<a href="http://bakingsugarfox.blogspot.de/p/conversion-table.html" target="_blank">Conversion table</a>" you find information on how you can measure this amount using cups, tablespoons and teaspoons.

- 3 eggs<br />
- 188 g (ca. 5/6 cup) granulated white sugar<br />
- 133 g (ca. 5/6 cup) flour<br />
- 76 g (ca. 2/5 cup) potato flour<br />
- 1 tsp. baking powder<br />

<b>Filling: </b><br />
- 250 g (ca. 2 cups) sifted powdered sugar<br />
- 150 g (2/3 cup) soft butter<br />
- 100 g (5 to 6 tbsp.) banana jam <br />
(for self-made jam: 200 g banana, 2 tbsp. lemon juice, 100 g jam sugar (2:1))<br />

<b>Cake </b><br />
- Cream eggs and sugar together with the mixer for about 5 minutes until it’s a fluffy mixture.<br />
- Mix flour, potato flour and baking powder and add it to the egg-sugar-mixture. Mix thoroughly.<br />
- Spread the dough on a backing sheet covered with parchment paper.<br />
- Bake in the oven: at 200°C (400°F), for 7 to 8 minutes.<br />
- Sprinkle some granulated sugar on another piece of parchment paper. When you take the cake out of the oven, directly turn it upside down on the parchment paper (I was afraid, the cake might break, but everything went fine). Carefully peel off the old parchment paper.
<br />
<br />
<b>Filling </b><br />
- For the banana flavor, I added banana jam to the buttercream. As I could not find banana jam in the store, I made banana jam myself. I took 200 g banana, 2 tbsp. lemon juice, and 100 g jam sugar (2:1). I mixed the ingredients in a pot and boiled the mixture for about 3 minutes. If you can’t find jam sugar in your store, you might have a look at this <a href="http://www.wikihow.com/Make-Banana-Jam-or-Jelly" target="_blank">recipe</a> for banana jam.<br />
- For making the buttercream, it’s best if all ingredients are room temperature. First, mix the soft butter with a mixer in a mixing bowl.<br />
- Add 100 g (5 to 6 tbsp.) of banana jam and mix again.<br />
- Add sifted powdered sugar and some teaspoons of milk and keep on mixing. The mixture should be creamy, but still stiff.

<b>Putting the cakes together </b><br />
- Cut out 12 small round cake layers using a glass or a cookie cutter. I used a glass with a diameter of 8 cm (ca. 3 1/4 inches).<br />
- To make the cakes banana shaped: First, cut each cake layer in half, so that you have 24 semicircles. Afterwards, cut each semicircle into a half moon.

- Put the buttercream into a piping bag and pipe about 1/3 of the buttercream onto the 12 cakes. Put the other 12 cake layers on top. <br />

- Pipe the remaining buttercream onto the top of the cakes. Afterwards, put the cakes in the freezer for about 1 hour.

- Mix marzipan with powdered sugar (I used about 50 g / 2/5 cup powdered sugar for 370 g / 13 oz marzipan). Add some drops of yellow food coloring to the marzipan and knead it well until the color is evenly distributed.<br />
- Now you can roll out the marzipan. I did it the following way: take about 40 g (1.5 oz) marzipan and roll it to an oval shape. Next, place it on a sheet of plastic wrap, and cover it with another sheet of plastic wrap. Use a rolling pin to roll the marzipan into a flat oval (18 x 14 cm / ca. 7 x 5.5 inches).

- Remove the top layer of plastic wrap. Take the bottom layer with the marzipan cover and place it over the cake. Gently remove the remaining plastic wrap. Fold the marzipan around the cake. Cut off the excess marzipan with a knife and use it (in my case it was about 5 g, 1/6 oz) for the next marzipan cover. When the cake is covered, place it back in the freezer for some minutes.<br />
- Melt the chocolate and pour the melted chocolate in a small bowl. Dip the bottom of each cake in the chocolate, and let the excess chocolate drip off (you might give it a gentle shake). Afterwards, place the cake on a parchment paper so that the chocolate can dry. <br />
- Take a pastry brush and dip it in the liquid chocolate. Paint some brown stripes on the bananas.

I used a <a href="http://kappeldk.blogspot.de/2010/10/kaj-kager.html" target="_blank">Danish recipe</a> from the blog kappeldk.blogspot.dk. Different from the recipe, I added some strawberry jam to the buttercream. For the cake, I used the same recipe as for the <a href="http://bakingsugarfox.blogspot.de/2013/04/recipe-for-kartoffelkager-danish-potato.html" target="_blank">kartoffelkager</a>. But you could also buy a cake (10 inches in diameter).</div>

- For the frog’s eyes: mix ca. 30 g / 1/4 cups powdered sugar with 1 to 2 teaspoons of water or lemon juice. Fill the icing in a piping bag. The icing should be stiff enough to hold its shape. Pipe two eyes on every cake. For the pupils, take a toothpick and dip it into the liquid chocolate. Place a drop of chocolate on each eyeball. Of course, you could also use other candy for the eyes, for example white candies for the eyeballs and chocolate chips for the pupils.</div>

Kartoffelkager are one of my favorite Danish cakes. The name “potato cake” refers to the look of the cake. Potatoes are not included as ingredients (except for potato flour, but you could probably also replace it with cornstarch). The cakes taste like vanilla and marzipan.</div>

For the kartoffelkager, I used a <a href="http://www.anjasopskrifter.dk/showRecipe.asp?recipeID=1234" target="_blank">Danish recipe</a> from anjasopskrifter.dk, which is an original confectioners’ kartoffelkage recipe. I barely speak Danish, but had some good translations tools. I made the following changes to the recipe:</div>

- My potatoes had a diameter of 7 cm/2.75 inches (instead of 5 cm/2 inches).</div>

- I made 8 potatoes (instead of 6), which is why I needed more marzipan (400 g/14 oz instead of 300 g/10.5 oz).</div>

I did it the following way: take about 60 g (2 oz) marzipan and roll it to a small ball. Next, place the ball on a sheet of plastic wrap, and cover it with another sheet of plastic wrap.
